How We Cook Mushrooms

We love our go-to mushroom prep: chop roughly and sautee alongside garlic and onion in butter or olive oil, then season with gochugara pepper or our other favorite herbs such as thyme or basil.

After cooking we add them to scrambled eggs, put over a salad of asian greens such as joi choi, or toss with pasta.

There are a ton of amazing ways to cook mushrooms as well! Here are a few of our go-to recipes:

Dried Oyster Mushrooms

A few ideas on how to use dehydrated oysters after rehydrating by pouring very hot water over them:

  • Add directly to soups

  • Drain (save the liquid) then chop into a paste in a food processor. Add paste to risotto, pasta, shepherd’s pie, etc

  • Roast in the over for a crispy burger topping

Lion’s Mane

Method 1: Roasted

- Cube, toss with herbs, roast in 425 oven on baking sheet until chewy ~30 min

Method 2: Sauteed

- Slice or dice, add to medium-high dry skillet. Add salt and herbs then add butter or oil.

    • This recipe uses both fresh and dried oyster mushrooms. We made it with golden oyster (delicious!) and are confident blues would also be great (so would chestnuts or pioppino for that matter). The crust is really quick to knock together, we used a food processor to cut in the butter.
